Pimped Up Beans On Toast Recipe

Ingredients:

•Duck legs

•Whole garlic

•Black peppercorns

•Rosemary and thyme

•Duck fat

•Sea salt

•Chorizo

•Olive oil

•Onion

•Red wine

•Mixed beans (cannellini, pinto, borlotti)

•Canned tomatoes

•Chicken stock

•Balsamic vinegar

•Eggs

•Bread

•Parmesan cheese

•Black pepper

Method:

1.Prepare the Duck:

•Place the duck legs in a pan.

•Add whole garlic, black peppercorns, rosemary, and thyme.

•Cover the duck legs in duck fat until they’re submerged.

•Add sea salt to taste.

•Cover the pan with foil and a lid.

2.Cook the Duck:

•Place the covered pan in the oven at 125°C for about 2.5 to 3 hours.

•Once cooked, remove the duck legs from the pan and set aside.

•Drain the fat and set aside the garlic. Peel the garlic.

•Pick the duck meat from the bones.

3.Prepare the Chorizo and Beans:

•Finely chop the chorizo into small chunks.

•Heat olive oil in a pan, and add finely chopped onion.

•Season with a generous amount of salt.

•Add the chorizo and cook for a few minutes.

•Pour in red wine and let it reduce.

4.Add the Beans:

•Once the wine has reduced, add your selection of beans (cannellini, pinto, borlotti).

•Stir in the garlic from the confit.

•Add half a tin of tomatoes and some chicken stock.

•Let it simmer for about 20 minutes on low heat until it thickens.

•Add a splash of balsamic vinegar for added depth of flavour.

5.Prepare the Poached Eggs:

•Bring a pan of water to a boil and add salt and vinegar.

•Lower the heat and poach your eggs.

6.Prepare the Toast:

•Slice bread thickly and toast until golden brown.

7.Assemble:

•Place the toasted bread on a plate.

•Top with the beans, followed by the shredded duck.

•Add a poached egg on top.

•Finish with shaved Parmesan cheese and a sprinkle of black pepper.

8.Enjoy!

•Serve immediately and enjoy your pimped-up beans on toast.
