Mint Staffing at “An Experience with Conor McGregor”

As the hospitality staffing Partner for Event City, Mint Staffing were asked to put together the entire hospitality, bar and retail team for the exclusive event “An Experience with Conor McGregor” on 28th January 2017.

This event was a world exclusive and feature packed to include staffing the below elements;

  • VIP Canapé & Prosecco Reception for 400 guests
  • VIP three course dinner for 1450 guests
  • Wine dispense
  • Stadium hawking for 3300
  • Crew catering (including a VIP member of staff to attend to Conor McGregor)
  • VIP Nightclub for Conor McGregor after party

Mint Staffing Operations team worked tirelessly in the weeks leading up to the event to put together a strong team of 250 staff, including a project manager, 4 floor managers, 2 kitchen managers, wine dispense manager, nightclub manager and an elite team of supervisors.

Our set up crew were on site from 10am to place and lay up the tables ensuring each dinner guest had an unrestricted view of the stage and the spacing was comfortable between tables. From 4pm our operations team arrived to set up staff check in areas and prepare for the mass check in that was about to happen. Each member of staff was delivered a health and safety briefing by Mint, checked in, passed through security and shown to their area of work.

At 5pm a detailed catering mangement brief took place, allocating areas to each of the managers, running through the order of service, menus and dietaries and taking questions. Dinner guests began to be seated at 19:00 to be served a starter of Minestrone Soup, main course of Slow Braised Beef Brisket and dessert of Sticky Toffee Pudding. The challenge for our food service team was to deliver three hot courses within our clients tight timescales. The last dessert hit the tables at 21:30 and out client was ready to announce the main event onto the stage, the notorious, Conor McGregor. Meanwhile throughout this process our incredible 40 strong wine waiting team were tending to our dinner guests beverage requirements, and our hawkers were ensuring 3300 stadium ticket holders had cold beer delivered to their seats.

Whilst the food service teams were wrapping up our Nightclub Manager was preparing to welcome thousands of ticket holders to the VIP afterparty. The nightclub was split into two areas with two bars, one side for general admission and the other side were pre-sold booth packages for VIP ticket holders.

At 22:45 our VIP booths were all set and ready to go, our nightclub manager finished a briefing with the staff and doors opened at 23:00. Table service flowed for the VIP guests, and bars in general admission were kept busy right up until the 4am close.

  • MINT supplied staff for our Christmas parties held in Event City, Manchester throughout November and December 2016. We required front of house managers, kitchen managers, set up staff, bar staff, waiting staff, kitchen assistants and back of house staff.
